Anyone that knows me well knows that I am slightly obsessed with my Thermomix. Or in general any appliance that saves me from mixing, chopping, whisking, grinding, weighing… you get the idea.

Sometimes I think – where is the love? You know the good ol’ days of hand whisking, hand mixing, hand chopping or my favourite hand smooshing a banana with a fork (the best right?).

What could better than having someone slave away in the kitchen for you. More importantly, someone that loves you, spending their time in the kitchen making something that you love, that will make you happy that will fill you up like a McDonald’s Cheeseburger cannot. 

That is true love in all forms.

This recipe would be great to make for breakfast during the week, you could make the mixture on a Sunday and let it rest in the fridge.

If you happened to have a kitchen gadget, my word chuck all the ingredients in there and you’ll have 2 minute pancakes.

You could whip this recipe out on this coming Tuesday, for Shrove Tuesday AKA Pancake Day (Tuesday 17 February). Or for Valentines Day, even if you don’t buy into that Hallmark crap. You can still say I love you to your lover, roomie, BFF, whoever happens to be in the kitchen when you decide to make this epic recipe.

In all honesty it’s 12.25pm and I just made this recipe up in 5 minutes (hence the name) and I wanted to share it with you as an example that you don’t always need lots of time and equipment to create freakin’ amazing food, nor do you need gadgets. But you definitely always need a fork and a banana.

5 Minute Banana and Sesame  Pancakes

Ingredients

  • 2 bananas

  • ¾ cup flour (any flour, I used millet because that’s what I had in my cupboard)

  • ½ cup water or milk or ‘mylk’ of your choice

  • 1 egg

  • 1 tsp baking powder

  • 3 tsp sesame seeds

  • Pinch of salt 

Method

  1. Grab a bowl, the bigger the better so you can get into that hand mixing vibe.

  2. Smoosh your bananas in the bowl with a fork, get them real smooth or leave them a little chunky.

  3. Add flour, water and egg, mix until smooth.

  4. Add sesame seeds and salt.

  5. Mix again, mix with love, think about how amazing they’re going to taste.

  6. Heat a pan on medium heat.

  7. Add some oil, I used coconut oil.

  8. Grab a ladle and scoop some of that golden mixture into the pan.

  9. Cook until bubbly all over, then flip – keep an eye on them you don’t want them to burn.

  10. Repeat the process until you’re out of mixture OR make a few and put the rest in the fridge or freezer 

Serving options

More banana, cacao nibs, shaved dark chocolate, yoghurt, coyo, coconut cream, double cream, berries, apple, figs, toasted nuts
