I’m not sure where this genius idea came from but I wanted to offer my lunch clients a fruit salad.  But there was one condition.  It actually had to taste good and be of a high quality. 

You know those fruit salads you buy and they’re old or have unripe fruit or wayyyy too much honeydew melon (eeek).  No offence honeydew, I do love you. But you’re over used.

These types of fruit salads are not cool. They’re not made with love. And that’s not how Lunch Lady Lou rolls.

I wanted to celebrate fruit and super fresh seasonal fruit, in an easy tasty way. Without having to just eat a piece of fruit plain on it’s own. It seems all the winter fruits on offer are kind of ‘built’ to be eaten by themselves – mandarin, orange, apple, kiwi. Or at least that’s how I eat them.

They’re beautiful together, but I just don’t seem to combine them, unless it’s in a jam or a pie…. yum. Definitely need to share some of these recipes with you. 

I wanted something spiced, something warming to top my porridge or chia pudding or granola or pancake mix. Without having to bake the fruit because sometimes ‘I aint got time for that‘.
