Hummus is a middle eastern creation and gee wiz they’ve done it well. It’s a combo of chickpeas blended with lemon, garlic, tahini, cumin and oil.

What is not to love? 

It is truly  a wonderful thing and my go to quick easy recipe to serve up to guests as a snack.

Take to work for morning tea.

Add to my salads.

Yep, you can pretty much put it on ANYTHING.I believe it’s something that everyone should make themselves.

There is no option for the store bought stuff! It takes less than 10 minutes to make and you have the piece of mind that you know what is in your food. 

So about those chickpeas…. they are:

  • Low GI. Meaning they will keep you fuller for longer and will assist with weight loss

  • High in protein

  • High in iron

So go on. Spend 10 minutes making this treat and take it to work. Leave the processed sugary treats behind and serve this instead. Your work mates will love you.

So there you go. A short but sweet ‘Ode to Hummus’ and introducing an easy Hummus recipe.

Hot Happy Hummus (an easy Hummus recipe)

Makes… 3 cups

Time… 10 minutes

Rating… easy

LLL tip… Feeling crazy? Blend in some roasted pumpkin.

Store… Keep for 3-5 days in the fridge Or freeze for 1 month.

Eat… with chopped carrot, celery and capsicum. And don’t forget to share with your friends!

Ingredients

  • 600g canned chickpeas, rinsed and drained (OR 1 cup of dried chickpeas)

  • 3 cloves garlic, crushed

  • 100ml olive oil

  • 2 tbs tahini paste

  • 1 tsp ground cumin

  • 1 lemon, juiced

  • 50ml water

  • 1/2 teaspoon of cayenne pepper (optional)

Directions

  1. Open chickpea can, drain brine and rinse.

  2. Add chickpeas to processor.

  3. Peel and crush garlic. Add to processor.

  4. Measure 100 ml olive oil. Add to processor.

  5. Squeeze juice of 1 lemon into processor.

  6. Add cayenne pepper to processor.

  7. Process until combined.

  8. Add water and process again until smooth.

  9. Serve with chopped carrot and celery OR add a dollop to your salad

NOTE: If using dried chickpeas, you will need to soak the chickpeas in water for 6-8 hours. Then simmer in hot water for 30-45 minutes. Allow them to cool before adding to the food processor.
