You too? Oh yeah, we all do. Did you know your pesto can be as whacky or crazy as you like? Sub the basil for mint, for chives, coriander. Use all the greens that you’ve got.
The thing I love about dips like this - you can have a luscious, flavourful, lip smacking dip and scoop it over a cup of rice, some greens, chopped cucumber and a little bit of feta. It makes eating well and cooking for yourself SIMPLE. Oh yeah, more of that please.. so here’s how I roll at the moment.
Throw it all in your blender. Blend it up and scoop it on anything throughout the week.
1 bunch basil, leaves only
Half bunch parsley
1/4 cup cashews
2 cloves garlic
1 lemon, zest and juice
1/4 cup olive oil
Throw all ingredients into your blender and blend until smooth.
Taste test and adjust, it may need a bit more lemon or salt.
