Roasted Red Capsicum Dip

Your time in the kitchen can be easier and more enjoyable. Promise.

It begins with filling your fridge with your fave food. Omit the diets, the shoulds and the guilt. Cooking is a radical act of joy, creativity and nourishment. We’re told we’re too busy for it constantly and I don’t believe it for a second. Filling your fridge with food you’re excited to eat can help bypass the ‘busy-ness’ we’re caught up in.

A fridge full of food, paired with a ‘fake it til you make it’ confidence of “I CAN’T STUFF THIS UP’“ will take you places you’ve never been.

If I know there’s a potato lying around. I’ll chop into chips, lightly coat in oil and roast that bad boy up. Exiting the oven piping HOT, I’ll sprinkle a tiny bit of salt and we’re good to go. Pure crunchy potato glory.

Chips make me excited.

Or when I’ve got the oven on, I’ll throw in a tray of Slow Baked Chicken thighs, they’re always a good idea. Close to 100% hands-off cooking, your oven will do the work for you, all we require from you is to show up in the kitchen and throw the ingredients on a baking tray. This is honestly my kind of cooking.

To be a good cook, you don’t need to be in the kitchen all day. Your recipes don’t need to be complicated. You just need a few good ideas, a fridge full of ingredients that excite YOU and a dip…

So what excites you?

My hack of the day for you is to make a delicious topping/dip/dressing. ⁣

With a homemade topping/dip/dressing, I know all I need is a pot of rice (or quinoa or noodles), a bunch of roasted veggies, a handful of leafy greens and my favourite non-negotiable fridge fillers and my meal time is 1000% easier.

Here’s one of my faves to make:

Roasted Red Capsicum Dip

This dip:

  • Jazzes up salad time⁣

  • Sparkles lathered on a sambo ⁣

  • Transforms a simple bowl of nothing into everything ⁣- by nothing I mean, rice, beans, quinoa, a boiled egg, cucumber, whatevs. ……………….⁣

Ingredients

  • 3 roasted caps⁣icum (about 1kg raw)

  • 1/2 lemon juice + zest⁣

  • 1/4 cup olive oil ⁣

  • 1/4 cup cashews ⁣

  • Salt⁣, pepper,

  • Optional: 1 small clove garlic, 1 tbsp grated ginger

Method

  1. Throw everything in a blender and blitz for around 40 seconds – 1 minute or until smooth.

  2. Store in a jar in the fridge for up to 1 week.
