As Lunch Lady Lou, it’s Linda Ellis’ full-time job to create and deliver healthy lunches across Sydney. So we asked Linda (aka Lou), a health coach and the chef behind the company, to share her favourite healthy lunch recipe.
“Salmon is loaded with good fats and fairly fuss free to cook too,” Ellis said on why she chose this recipe. “Parsley isn’t just green and bright it’s an excellent source of vitamins. My motto is to use herbs like you would your greens, so go crazy.”
