This may shock you but I’m really lazy when it comes to cooking.
When I browse for a recipe, the ones that catch my eye take the least amount of time. Super brownie points awarded if its under 20 minutes and ultimate genius status if its under 10.
I used to spend HOURS cooking. Partly because I couldn’t chop to save my life and partly because I would follow a recipe EXACTLY and I have a bad memory… you see where I’m going. But then I became acquainted with flavours, ruthless on cooking quickly (not rushed just efficiently) and ballsy to put what I thought were weird flavours together (turns out lots of things go together, I was playing too safe) and that is where the magic happens.
And so this Vanilla Pears recipe was born based on my core cooking values and my obsession to put anything and everything on top of yoghurt. Creating quick, flavoursome heaven in under 5 minutes.
A pear or pears – 1 per person is plenty
1/2 teaspoon vanilla powder
1 teaspoon coconut oil
4 tablespoons plain yoghurt
Topping of your choice: nuts, coconut, cacao nibs, grated dark chocolate
Slice your pears fairly thin.
Place in a bowl and mix through the vanilla powder and coconut oil. Let them sit for a minute or two.
Heat a pan on a low heat and add your pears. Cook until soft, about two minutes each side.
Add your yoghurt to your favourite bowl, add the pears and your choice of topping.
