Creamy Chicken and Parmesan
Ingredients

A handful of leftover roast chicken

2 tbsp plain yoghurt or coconut yoghurt

A sprinkle of garlic (use a microplane to shave a small amount of garlic – keep the rest in the fridge for later)

1/2 tsp wholegrain mustard

A good squeeze of lemon juice

1 tbsp grated parmesan (leave it out if you’re dairy free)

1/2 tsp dried herbs

Salt
-
Pepper
Method

In a bowl, combine all ingredients and mix well. Leave to sit for 10 minutes

Serve on a piece of toasted sourdough, on top of a salad, or warmed through with pasta.
