Creamy Chicken and Parmesan


Creamy Chicken and Parmesan


  • A handful of leftover roast chicken

  • 2 tbsp plain yoghurt or coconut yoghurt

  • A sprinkle of garlic (use a microplane to shave a small amount of garlic - keep the rest in the fridge for later)

  • 1/2 tsp wholegrain mustard

  • A good squeeze of lemon juice

  • 1 tbsp grated parmesan (leave it out if you’re dairy free)

  • 1/2 tsp dried herbs

  • Salt

  • Pepper


  1. In a bowl, combine all ingredients and mix well. Leave to sit for 10 minutes

  2. Serve on a piece of toasted sourdough, on top of a salad, or warmed through with pasta.
