1 clove garlic, minced
1 lime, zest and juice
1/4 tsp grated ginger (optional)
1 tbsp red onion, chopped fine (optional)
1 tbsp coriander, roughly chopped
Add all ingredients to a bowl and mix well.
Taste test and adjust if needed.
The flavour builds over time, I like to let it rest for 10 minutes or so, because let's be honest 10 minutes is already long enough.
