What do you get when you mix  spring (the season), a blender, a Russian kale harvest from your balcony and some leftover parmesan cheese? Why of course, it’s….The Besto Pesto 

The Besto Pesto… aptly named. Because it is, the besto.  But what happens when it’s still early spring and the basil plants haven’t given us a beautiful harvest yet? We swap basil for kale and wonder why we didn’t do this sooner.

Don’t get me wrong. Basil and me are besties. In summer basil is on my plate all day. I may even called my first born basil, I love it so. But sometimes it’s not around and we need to substitute – enter kale and parsley.

This recipe has been gracing the lunch menu over the past two weeks and all reports are LOVE. Bright, fresh, game-changer. This recipe is sure to impress and if you’re after an extra veggie hit, you’re in luck.
