Mum’s Crackers
Making your own crackers is one of those things that seems like a lot of effort, until you do it and you wonder what you’ve been doing with your whole life.
You’ll make time (the whole 5 minutes required) to make things like this when you realise the gold mine that’s awaiting you.
Crackers, seedy, crunchy, salty, herby, gluten free if they need to be.
Make these, then go make a dip, sit on the balcony with your lover, friend or family and shoot the sh*t (as they say). Best served with some tunes and a cool beverage.
Ingredients

1/3 cup each of sesame seeds, black sesame seeds, sunflower seeds and corn flour

1 tbsp cumin seeds OR fennel seeds OR dried herbs

A good pinch of salt

Pepper

1/3 cup extra virgin olive oil

1/3 cup boiling water
Method

Preheat oven to 180 degrees C.

In a bowl mix together dry ingredients.

Add olive oil and mix well to combine and coat all dry ingredients.

Add boiling water. Mix well to combine. It will look really wet, as you mix it will come together.
If you need to, add extra flour 1 tbsp at a time, stirring thoroughly until it’s at a wet but runny consistency (watch the video) -
Line a baking tray with baking paper.

Pour cracker mix onto tray and use a spatula to spread evenly over the tray as evenly as you can.

Place in oven and cook for 15 minutes. Remove from oven and cut into squares. Place back in oven to cook for another 15-20 minutes, until brown and crunchy.

Store in an airtight container for up to 2 weeks.
